2016 Carbonated BLUSH –  Great fruity flavor with light carbonation.  Slightly off-dry, the ripe strawberry and peach flavors linger with the aroma and on the pallet.  A nice party wine going well with light foods and snacks or just as a porch pounder.  Very Popular!                                                                                                                        
First Course
 
Smoked Salmon with Cream Cheese and Capers
 
2017 Chardonnay – Fermented Sur Lees method in new oak barrels with a light creamy bouquet of oak, apple, and pineapple.  Flavors of apple, unripe pineapple and oak are laced with firm acidity and moderate tannin.  It finishes medium-broad and medium-long with a lingering spicy oak flavor.  Pairs well with a variety of foods, fish, chicken, cheeses etc…
 
Grape, Cheese and Fruit Tray / Vegetarian Option (Hummus and Pita Chips)
 
2016 White Pinot Noir - Lovely rose color and slightly Off Dry.  Very fruity with light peach taste.  Goes well with cheddar cheese, spicy and Mexican food.  One of our most popular wines last season and this.  Will sell out this year. Very Popular!    
 
Second Course
 
Beef Tenderloin Crostini
 
2015 Cabernet Franc - This wine would go well with Prime Rib or any red meat.  It has ripe, smooth, soft, attractive aromas of black raspberry, blackberry, and black cherry plus hints of vanilla and smoke.  All repeat as flavors which are light bodied, are not sweet and are accented with light tannin.
 
Pork Satay with Peanut Sauce / Vegetarian Option (Ratatouille on Garlic Bread)
 
2015 Lemberger - An Austrian varietal Lemberger, is rapidly becoming Colorado’s grape.  A full-bodied dark dry red, this wine has lots of fruit up front (strawberry, cherry and peach), followed by an earthy note, fresh ground black pepper and light toasted oak.  Light tannin astringency.  Designed to go with pork, it is very versatile with food and works especially well with sausages and BBQ.  Try with appetizers and light foods. Good for parties.

2015 Gewürztraminer – Opens with a fruity bouquet joined by sweet pear and grapefruit.  Flavors of apple, pear, grapefruit, and a hint of spice fill the mouth then finish broad and long.  The sweetness is well balanced by bright acidity making it a very refreshing summer quaffer. Pairs well with German, Asian and spicy food, or nice to sip on a warm summer evening.  The traditional “Turkey Wine” for Thanksgiving and Christmas dinner.
 
Dark Chocolate Brownie with Dark Chocolate Chips
 
2016 Cabernet Sauvignon - This full bodied Cabernet has currant, raspberry, blackberry, cherry and light smoky oak on the nose, all of which repeat on the pallet, and finish intense.  Color is rich and almost black.  Well balanced and integrated, this cab is great with a fatty steak such as rib eye.  Try with dark chocolate to lighten tannin.

New for 2019! We are pleased to offer a new weekend evening experience for both residents and guests visiting the San Luis Valley: Wine Train Colorado.
Our Wine Train offers first-class seating and traditional white linen rail service and a sampling of Colorado wines. Our chef-inspired menu allows guests to sample both whites and reds with a variety of delectable small plate offerings, ending on a sweet note. Perfect for couples or foursomes and ideally suitable for large parties as well. Guests can keep it casual or dress to a theme! Engage in conversation, walk about our vintage dome and art deco club cars while enjoying jazz music on your two-hour round trip rail journey.
